  • 1 1/2 cups
    all-purpose flour (375 mL)
  • 2 tbsps
    granulated sugar (30 mL)
  • 2 tsps
    baking powder (10 mL)
  • 1 tsp
    ground cinnamon (5 mL)
  • 1/2 tsp
    baking soda (2 mL)
  • 1/2 tsp
    salt (2 mL)

  • 1/4 cup
    applesauce (50 mL)
  • 1/4 cup
    sour cream (50 mL)
  • 2 tbsps
    butter, melted (30 mL)
  • 1 tbsp
    lemon juice (15 mL)
  • 1 tsp
    vanilla extract (5 mL)
  • 2 cups
    diced apples (500 mL)
  • vegetable oil, for frying
  • Glaze:
  • 1 cup
    icing sugar (250 mL)
  • 1/4 cup
    milk (50 mL)

Whisk together flour, sugar, baking powder, cinnamon, baking soda and salt in bowl until blended; set aside.

Whisk together eggs, applesauce, sour cream, melted butter, lemon juice and vanilla in large bowl. Stir in flour mixture just until combined. Fold in apples.

Tip

Add raisins or chopped nuts to fritters if desired.

Pour enough oil to come 4 inches (10 cm) up side of large saucepan set over medium heat. Heat oil to 375°F (190°C). Drop batter, using 1/3 cup (75 mL) measure, into hot oil. Fry, in batches, for 2 to 3 minutes per side or until golden brown and cooked through. Transfer to rack set over rimmed baking sheet using slotted spoon.

Glaze: Melt butterscotch chips in heatproof bowl set over larger saucepan of barely simmering water. Stir in icing sugar and milk until smooth.

Dip fritters in glaze using 2 forks, letting excess drip back into bowl. Return to rack; let stand for 5 to 10 minutes or until glaze is set. Serve warm.
