    granulated sugar

    brown sugar

    bananas, medium, mashed (overriped)
  • 1 tsp
    vanilla extract (5 mL)
  • 320 g
    all-purpose flour
  • 1 1/2 tsps
    baking powder (7 mL)
  • 3/4 tsp
    baking soda (4 mL)
  • 1/2 tsp
    salt (2 mL)
  • Cream Cheese Frosting:
  • 115 g
    unsalted butter, softened
  • 225 g
    cream cheese, softened
  • 450 g
    powdered sugar
  • 1 tsp
    vanilla extract (5 mL)
  • 1/4 tsp
    salt (1 mL)
  • 1-2 tbsps
    milk (15-30 mL)
  • pink gel food colouring

Preheat oven to 350°F (180°C) and line the bottoms of three 6” (15 cm) cake pans with parchment paper.

In a large mixing bowl, cream together the butter and sugars with an electric mixer until fluffy, about 3-4 minutes.

With the mixer on low speed, mix in the eggs, milk, mashed bananas, and vanilla extract until combined.

In a separate bowl, stir together the flour, baking powder, baking soda, and salt. Add half of this mixture to the wet ingredients and mix on low speed in between each addition until just combined.

With a spatula, fold in the milk chocolate chips.

Divide the batter into cake pans and bake for 40-45 minutes or until a toothpick inserted in the middle comes out clean. Let cool for at least 20-30 minutes before removing from pans.

Cream Cheese Frosting: in a large mixing bowl, cream together the butter and cream cheese with an electric mixer until creamy. With the mixer on low speed, mix in the powdered sugar, vanilla extra, and salt. Add in 1 tbsp (15 ml) of milk at a time until you get a smooth, spreadable consistency. Mix in pink food gel until frosting is evenly tinted, if desired.

Once the cakes are completely cooled, level the layers, stack, and frost.
