  • 1/3 cup
    smooth almond or peanut butter (75 mL)
  • 1/2 cup
    liquid honey (125 mL)
  • 1 tsp
    vanilla or almond extract (5 mL)
  • 1 cup
    quick-cooking oats (250 mL)
  • 1 cup
    puffed rice cereal (250 mL)
  • 1/2 cup
    flax seed (125 mL)
  • 1/2 cup
    chopped dried cranberries (125 mL)
  • 1/2 cup
    pumpkin seeds (125 mL)
  • 1/2 cup
    raw sunflower seeds (125 mL)
  • 1/2 tsp
    salt (2 mL)

Line an 8” x 8” (20x20 cm) pan with overhanging parchment or wax paper.

In a large pot over medium heat, add nut butter, honey and extract. Stir until melted and smooth.

Remove the pot from heat and add oats, puffed rice cereal, flax seeds, dried cranberries, pumpkin seeds, sunflower seeds and salt. Mix well to combine. Let the mixture cool slightly, then add in 1 cup (250 mL) of the chocolate chips.

Transfer the mixture to the prepared pan. Press the mixture firmly into the pan. Sprinkle with remaining 1/3 cup (75 mL) chocolate chips.

Refrigerate for a minimum of 1 hour, or overnight.

Remove from the pan and slice the bars into the size that you like. Store in an airtight container in the fridge for up to a week.
