With the addition of HERSHEY'S CHIPITS Butterscotch Chips, these ooey-gooey s’mores bar cookies are a tasty treat that everyone will enjoy.
Heat oven to 350°F (180°C). Grease 8-inch (20 cm) square baking pan.
Beat butter and sugar using electric mixer until light and creamy. Beat in egg and vanilla; beat well. Meanwhile, in bowl, stir together flour, graham cracker crumbs, baking powder and salt; add to butter mixture, beating until blended. Press half of the dough into prepared pan. Bake for 15 minutes.
Break chocolate bars into pieces; toss with 1 cup (250 mL) of the butterscotch chips. Sprinkle over baked layer. Top with marshmallows; scatter remaining graham cracker dough over top. Bake for 15 to 20 minutes or just until marshmallows are melted and lightly browned. Cool completely in pan on rack.
Melt remaining butterscotch chips in heatproof bowl set over saucepan of simmering water, stirring until smooth; drizzle over top of s’mores mixture. Let stand for about 30 minutes or until top is set.
Alternatively, cut into small squares if preferred.
