                            Preheat oven to 375°F (190°C). Lightly grease 24 mini muffin cups or line with paper baking cups.
Beat butter, granulated and brown sugars, peanut butter, egg and vanilla using electric mixer until light and fluffy. Stir together flour, baking soda and salt. Beat into butter mixture until well combined.
Spoon heaping tablespoonful (20 mL) of batter into each prepared muffin cup. Bake for 10 to 12 minutes or puffed and lightly browned. Transfer to rack.
Meanwhile, melt peanut butter chips in heatproof bowl set over pot of barely simmering water. Remove from heat.
Gently press handle of wooden spoon into top of each muffin to create indentation.
Fill each cookie with melted peanut butter chips. Let cool completely in pan.
If desired, drizzle each muffin with melted HERSHEY'S CHIPITS Pure Semi-Sweet or Milk Chocolate Chips.
